General description

Alcalase® is a serine endopeptidase that consists primarily of subtilisin A.

Application

Alcalase® Enzyme, Bacillus licheniformis has been used in the proteolytic digestion and extraction of polysaccharides in various sponge species. It has also been used as an endoprotease enzyme in enzymatic hydrolysis for the production of fish protein hydrolysate.

Biochem/physiol Actions

Alcalase® is suitable for the hydrolysis of proteins with an optimal pH of 7.0-8.5. It is used as an additive in detergent, dehairing, and bating leather. Alcalase is also used in meat tenderizing, cheese flavor development, baked manufacture, and improving the digestibility of animal feeds. Commercial Alcalase® comprises a liquid enzymatic preparation containing 50% glycerol, 41% water, and 9% protease extract from Bacillus licheniformis.
